No surprise, but I meal prep every week. Each weekend I set aside some time to cook food for lunch, a couple snacks, sometimes breakfast and sometimes dinner.
Food prep helps me to eat healthy all week long without feeling stressed about it.

I try to vary what I make for lunch each week. Sometimes I’ll have enough time to make two entrees, which I will then rotate between lunch and dinner to avoid boredom. Sometimes however, I have the same lunch four days out of the week (I have a lunch meeting once per week, so I don’t make one for that day).
It doesn’t bother me to each the same foods each day at noon, but I do try to make foods that I can enjoy and look forward to every single day.
Honestly, pasta is something that I can eat for lunch day after day and it never gets boring to me. Mexican-inspired food is something I can eat all week long as well. It never gets boring to me!

These green chile beef & bean burritos are healthy, full of protein and I promise they are easy to make.
Each burrito has 325 calories and 30 grams of protein! The calories will obviously vary based on what tortillas you use and what toppings you add.
I use whole wheat tortillas for this healthy recipe. My go-to whole wheat tortilla is the Xtreme Wellness High Fiber Low Carb tortillas.
These tortillas are only 50 calories each, but the best part is they are soft and pliable! Some whole wheat tortillas are hard and can break apart easily. These do not!
First, you’ll brown the meat. Meal Prep Green Chile Beef & Bean Burritos are made with beef, obviously, but they can be made with ground chicken or ground turkey as well.
Then you’ll spread refried black beans on each tortilla, which provide protein AND fiber to the dish. Refried pinto beans work well too in this recipe.
Next, you’ll evenly divide the meat mixture among all the tortillas, fold/roll them and bake them.
In terms of garnish, add whatever you would like! Some of my favorites are shredded romaine lettuce, mashed avocado, Greek yogurt or sour cream, cilantro and chopped green onion.
Use whatever toppings you like on your burritos and, if you’re feeling crazy, every day can be different!
Meal Prep Green Chile Beef & Bean BurritosPrint Recipe
- 1.5 lbs extra lean ground beef
- 8 whole wheat tortillas
- 1 15-oz can refried black beans
- 1/2 yellow onion, diced
- 1 16-oz jar green chile sauce (such as 505 Southwestern Green Chile), divided
- 1 2.25-oz sliced black olives, divided
- 1 teaspoon granulated garlic
- 1 teaspoon cumin
- 1 teaspoon coriander
- 1 Tablespoon salt
- 1 cup mozzarella cheese, shredded
- Optional garnishes: shredded romaine lettuce, sour cream or Greek yogurt, mashed avocado, salsa, chopped green onion, cilantro, etc
Preheat oven to 350 degrees. Spray a 9x13" glass baking dish with nonstick cooking spray. Add 1/4 cup green chile to the bottom of the dish and spread with the back of a spoon. Set aside.
Over medium heat, brown the ground beef with the diced onion until the meat is no longer pink. Add the garlic, cumin, coriander and salt to the meat. Stir until spices are evenly distributed.
Divide the refried beans among the 8 tortillas and spread evenly with the back of a spoon.
Evenly divide the meat mixture among all 8 tortillas. Top meat with half of the sliced olives.
One by one, fold the sides of the tortilla inward and roll like a burrito. Place burritos in the prepared baking dish seam side down.
Pour the remaining green chile sauce over the burritos and spread with a spoon or spatula. Top with cheese and the remaining olives.
Bake at 350 degrees for 25-30 minutes, or until the cheese is melted and bubbly.
Serve immediately with your favorite garnishes or allow to cool and separate into meal prep containers with toppings.
